Introducing our Head Chef - Simon Hyde

Born in Bristol, Simon cumulates 29 years of culinary experience.

His culinary journey began at the age of 13, working after school in an Italian restaurant in Bath started his passion for food, he then progressed by attending chefs college where he learnt vital skills to become a professional.


Whilst at college Simon entered into a national competition at Westminster college judged by Albert Roux which he won first place, his eagerness to learn about food took him to Italy where he studied at a college to learn about their cuisine.


After finishing college Simon started work at a 2 rosette hotel in Bath then progressed to other hotels and restaurants furthering his career.


Simon was offered a position as Head chef to open a restaurant near Torquay, on becoming an Accredited Head chef he was involved in food development and training for Mitchell’s & Butler’s village pub & kitchen brand, he also assisted with opening more pubs around the country, after his time at Mitchells & Butler Simon was then given the opportunity to run his own pub for Butcombe Brewery prompting him to move to Somerset where he ran a country pub for 6 years which won him pub of the year, he was then offered a position within the brewery to become menu development and training chef helping their large portfolio of country pubs, he was then asked by the brewery if he would like to look after their 2 rosette restaurant The Auberge in Guernsey, following the move to Guernsey he was asked to be head chef at the famous television home of Bergerac in jersey now the Old Court House Hotel.


Returning to Somerset Simon is now excited and looking forward to the opening to Brean Country Club where he will be Head chef
